Three Magnets Brewing – Release Jazz Cabbage Brute IPA

This ale is stylistically referred to as “Brut” or “San Francisco” style IPA. Originating in the Bay Area, brewers add an additional enzyme, alpha-amylase, to both the mash and fermentation which breaks down complex sugar chains making easily digestible fermentable sugars for yeast to feed on. The resulting beer finishes exceedingly dry leading to no perceptible sweetness common to most beers.

Jazz Cabbage is kettle hopped then extravagantly dry hopped with Denali, Centennial, and Simcoe hops leading to a touch of tropical with a hit of pine. A foundational malt profile of pilsen and Vienna is barely noticeable with the high level of attenuation using an English yeast in tandem with enzymes. This beer is truly a hop feature with a clean balanced bitterness and a huge aroma.

6.5% ABV and LOW, yet perfectly balanced, IBU
