ESB, pale malt, munich, cara pils and rye malts are barely noticeable with the high attenuation using an English yeast and enzymes to help ferment out nearly all of the residual sugars. Kettle hopped with Danali, and dry hopped with Hallertau Blanc and Huell Melon for soft, clean flavors of peach and white grape.

Quadruple Dry Hopped Hazy DIPA

Boasting a 4.0 score on Untappd, our original WOOHOO! Is one of our most popular beers, and features Simcoe, Amarillo, Eureka, and Citra hops. The original recipe is already amazing at 6 lbs. of hops per barrel, we’ve now taken the original recipe to the EXTREME by nearly doubling that to over 10 lbs. per barrel, for a dank treat like none we’ve brewed before!
Coffee Tomkins
Imperial Oatmeal Stout

Like its namesake, Major Tompkins, the 151 ton iron-hulled steam boat that carried goods, people and mail between Olympia and Seattle, this beer is big and strong. And this version packs a caffeine punch for those early mornings – it was conditioned for 48 hours on a single producer natural process Ethiopia Yirgacheffe coffee. Adissu Kidane is a single-farmer coffee from Ethiopia. Traditionally, Ethiopian coffees from individual producers are combined and sold by a cooperative. This rare lot is the result of a quality-focused, direct trade program Olympia Coffee has with Kidane’s cooperative, the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU). YCFCU is undertaking a handful of single-producer micro lots, and we were lucky enough to secure some of Olympia Coffee’s stash to brew this amazing beer. The cherries come from Kidane’s home and farm in the village of Yirgacheffe in the Gedeb zone of southern Ethiopia. These cherries slowly sun dry on raised beds, allowing the coffee fruit to permeate back into the beans, essentially flavoring the coffee with deep, exotic fruity notes. Those fruity notes, combined with the hefty chocolate notes of the roasted malts and soft oatmeal mouthfeel of our Major Tompkins, make for a special treat. You don’t want to miss the boat on this release!
