From Holy Mountain Brewing:  Holy Mountain The GoatThis Saturday, June 27th, at noon we’ll be releasing two new beers in bottles and tapping two separate new beers on draft.

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months. Although we plan to brew The Goat again, there will never be a batch like this, and we don’t have immediate plans to ferment another batch in the foudre or to age it for so long before release. There are 80 cases available, 1 case limit per person, and this release will see distribution to some local stores and bars. This batch has white wine notes from the brett, opening up with pear, mint, and oak. Bone dry and 4.9% ABV, this beer is wonderfully effervescent, perfect for summer drinking. Also in bottles, a brett saison, Choir of the Sun, which was fermented and aged for 7 months in a puncheon with several saison strains. This beer was aged and conditioned with three brettanomyces strains, which blend to create aromas and flavors of peach and apricot. Light and refreshing, this beer has been conditioned for a month and will continue to evolve very nicely throughout the following months. 39 cases, 6 per person. $15.

We’ll be tapping two new barrel aged beers to celebrate. Blackberry Table is a Table Sour aged in oak with a wild culture and then refermented on blackberries with brett. Barrel Aged River of Ash is from our early 2015 first batch of this dark farmhouse ale. We fermented this in a third use bourbon barrel on cherries and then transferred it to a wine barrel and aged it with brett for the last 5 months.
