Cinco de Mayo has evolved from its early military history into a celebration of Mexican heritage and pride. At Pike we honor the diversity of Mexican food and culture.
CERVEZA ROSANNA
Each year to celebrate, the Pike brewers tweak the recipe a bit to surprise Rose Ann Finkel, the namesake of this beer. This year’s Rosanna is a cask-conditioned Pike Naughty Nellie seasoned with a superb mix of chilies.
CEVICHE
Chef Gary has paired wild Alaskan halibut and salmon marinated in fresh squeezed organic lime juice, Pike Monk’s Uncle Tripel, tomatoes, red onion, cilantro and bell peppers. Served with Pike house-made guacamole and and house-fried corn tortilla chips.
