Roger Bialous and Manny Chao… a couple of beer loving local boys who brewed up a pretty darn tasty beer in the garage (actually it was the back deck, but garage sounds better). We decided to chuck our jobs… all for beer. Yee-haw.

In all seriousness, we’re living out our dreams. We love beer. We love brewing. Here we are. Life’s too short not to follow your beer, er… I mean passions. The Zen philosopher Basho once wrote, ” a flute without holes is not a flute and a donut with no holes is a danish.”

They brew on a 60 BBL Chopp/Elston brewing system with fermentation tanks made by Interior Stainless Inc. Currently we brew right around 40K barrels a year, but our current capacity allows us to brew up to 100K a year. We started brewing in our new space in the fall of 2008 and our new tasting room opened in June of 2010. Building a brewery has been fun, frustrating, rewarding, scary, and exciting all at once. We really could not have done it without the help and support of our friends, our family and our customers.

John Robertson and Scott Hansen founded the Bellevue Brewing Company on January 26, 2010, and then spent the next two years and eleven months putting the entire jigsaw puzzle together. Despite the worst economy in 80 years, the two persevered, working through the myriad decisions regarding real estate, finance, design, brewhouse manufacturing, permitting, licensing, construction, and staffing. It was a major ordeal, almost unbearable at times, really…but the two were quickly rewarded on December 20, 2012 when the doors opened and the many thirsty people rejoiced!

Our beer this is one area at the BBC where we absolutely do not cut corners, never have, never will. We are dead serious when it comes to brewing the beers we choose to brew. We use only the finest ingredients, most of them from right here in Washington, when handcrafting our various beers.

Our head brewer (Tony Powell) is about as dedicated to the brewing arts as one could be and enjoys blending old-world and modern brewing techniques when breathing life and complexity into the recipes he creates. We’re primarily an ale brewery and will introduce world-class lagers over time. We have an ongoing cask-conditioned ale program and are also beginning to barrel-age a number of our beers, which is wonderfully rewarding.
